Brake pad sizes

I have a 26" mountain bike w/ rim brakes and I measured the brake pads - 55mm wide

can I go up to 70mm?

If they don't hit the frame & interfere with removing the wheel. V-brakes or cantilevers? I have not found anything that stops better than (Salmon) Kool Stop Supra 2 on a V-brake.
On an old Suntour cantilever I tried the Sticky Fingers & they were difficult to adjust & poor, noisy stoppers. In fact, if you have old smooth post cantilevers, now might be a good time to get new levers & linear pull V-brakes.

I upgraded to 70mm pads and they have been working good. I just got some cheap ones but it was still an upgrade

My favorite pad for your application is the Kool Stop Supra 2 in Salmon. I've tried all kinds of pads & nothing has really even been close for me.

Yeah, I second that suggestion. The BBB compound for wet weather is also nice, but KoolStop are even better.

Even in dry conditions I prefer the salmon, but I am a super heavy load.
