Fix Up Questions

It's official. My son and I are going to rebuild my Raleigh Sprite 10 for his county fair project. As near as I can guess it's a mid 1970's vintage bike. I'm hoping you can help me out with a few questions. I know purists will cringe but I'd like at least a few modern upgrades. I've already chosen a friendlier saddle. In addition to a new rear wheel I'd like to include quick release hubs for the front and rear wheel's and the seat post. Is there any reason I can't use any of these?

Usable hubs: depends on fork and frame spacing, though at least the frame can be cold set (bent a bit), I'm not too sure if I'd do that to a fork (but hey, it is steel, it should be possible).
Mind the whole kaboodle of incompatibilities, though (read about old bikes on http://www.sheldonbrown.com).
